概述
糜蛋白酶又稱為胰凝乳蛋白酶，是從牛（豬）的新鮮胰腺中提取分離出的肽鏈內切酶。呈白色、微**結晶或無定形粉末，易溶于水，不溶于有機溶劑。相對分子質量24000，最適PH8~9。干態(tài)穩(wěn)定，水溶液中會迅速失活，以PH3~4的水溶液為最穩(wěn)定。作用于蛋白質時，優(yōu)先水解L-酪氨酸和L-苯丙氨酸的羧基所形成的肽鍵。

用途
